Crispy Air-Fried Zucchini: A Lighter Take on a Tasty Snack

Prepare the Zucchini:
Wash the zucchini thoroughly and slice it into rounds or sticks, depending on your preference. Pat the slices dry with a paper towel to remove excess moisture, which helps the coating stick better.
Set Up the Coating Station:
Arrange three shallow dishes for a breading station. In the first dish, place the flour seasoned with salt and pepper. In the second, beat the egg. Mix the breadcrumbs and grated Parmesan cheese in the third dish, blending well.
Coat the Zucchini:
Dip each zucchini slice first in the flour, shaking off excess. Then, dip it in the beaten egg, and finally, coat it thoroughly in the breadcrumb and Parmesan mixture. Make sure each piece is well covered with the coating for maximum crispiness.
Prepare the Air Fryer:
Preheat your air fryer to 200°C (approximately 400°F). This step ensures that the zucchini will start cooking immediately, helping to create a crispy exterior.
Air Fry the Zucchini:
Spray the air fryer basket with oil spray to prevent sticking. Arrange the coated zucchini slices in a single layer in the basket. Spray the tops lightly with oil spray to enhance browning and crispiness.
Cook for about 10 minutes, then flip the zucchini slices and spray again with oil if needed. Continue cooking for an additional 5-10 minutes or until golden and crispy.
