Grate the zucchinis and potatoes into a large mixing bowl.

Take spoonfuls of the mixture and form them into patties. Coat each patty in breadcrumbs.
Fry the patties in the hot oil until golden brown on both sides, about 3-4 minutes per side.
Once cooked, transfer the fritters to a plate lined with paper towels to drain any excess oil.
