Deep-Fried Chicken Thighs with Fresh Salad Recipe

1. Preparing the Chicken:

Pat the chicken thighs dry with paper towels. Season generously with oregano, garlic powder, onion powder, and pepper. Make sure each thigh is well-coated with the spices.
Heat the oil in a deep fryer or a large, deep skillet to about 350°F (175°C). Once the oil is hot, carefully place the chicken thighs in the oil and fry until golden brown and crispy, about 8-10 minutes per side. The internal temperature should reach 165°F (74°C) when done.
Remove the chicken from the oil and let it drain on paper towels to remove excess oil.
